Diet and Autism
The author, whose son suffers from food allergies as well as autism, advocates that nutrition, proper diet and detoxification can help boost the immune system and help alleviate symptoms of allergies and autism. As proven by numerous parents of autistic children, symptoms of autism can be reduced by avoiding gluten (a protein found in wheat, barley and rye) and casein (a protein found in milk). The 1st edition contains numerous gluten-free and casein-free recipes, as well as raw side dish recipes- raw foods are highly detoxifying and nutritious - a must for those with allergies and/or autism.
Many of the recipes in the 1st edition require oat flour, which is not 100 percent gluten free. However, oat can easily be replaced by other gluten-free flours. All recipes in this edition are casein-free.
Susan Kelley Delaine was raised in Bloomfield, CT. She attended Rutgers University where she earned a Bachelor's degree in Urban Planning. After living a few years in Silver Spring, MD, she attended Howard University, where she earned a Master's degree in Geriatric Social Work. While pursuing her graduate degree she married her husband, Chris, whom she dated since high school.
Susan now lives in Fayetteville, GA with her husband and two sons, Justin and Ryan.She is a very active mother and credits the creation of this book to Justin. With several food allergies, he was her primary inspiration.
